Chicken Bacon Ranch Sweet Potato Bake

One-pan Chicken Bacon Ranch Sweet Potato Bake is a flavor-packed meal that will likely become a new family favorite and addition to your menu rotation!

INGREDIENTS

  • 2 medium sweet potatoes, peeled and cubed (about 3-3 1/2 cups small cubes)
  • 12 oz. green beans, trimmed
  • 1 small red onion, sliced (about 1 cup)
  • 3 slices no-sugar added bacon, chopped (Recommend: whole30 compliant Applegate Bacon)
  • 1 Tbsp. avocado oil + additional oil for chicken thighs
  • 2 Tbsp. fresh thyme (or 1 tsp. dried thyme)
  • 1 1/22 lbs. chicken thighs, bone in/skin on (5 chicken thighs)
  • 1/2 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1/41/2 cup

INSTRUCTIONS

  1. Pre-heat oven to 425 degrees. Line a sheet pan with parchment paper.
  2. Add the sweet potatoes, green beans, red onion, bacon, and fresh thyme to the sheet pan. Drizzle with avocado oil and toss to coat (because of the bacon, you just need a little oil).
  3. With a paper towel, soak up as much liquid as you can from the chicken thighs. Spread out veggies to make a space for each chicken thigh. Place on pan. Brush with a little oil.
  4. Dash all sheet pan contents with sea salt and pepper and a little extra thyme or twigs of thyme if you wish.
  5. Bake for 30 minutes or until chicken is cooked through. Toss veggies a couple of times during baking time.
  6. Remove from oven, drizzle with ranch and serve.

NOTES

**You may use boneless/skinless chicken thighs or breast in this recipe. The time might need to be adjusted or you may need to remove the chicken from the pan/oven and cover with foil to keep warm while the veggies continue to bake until done to your liking.

  • 1 whole Medium Sized Onion, Chopped
  • 3 whole Carrots, Chopped Fine
  • 3 stalks Celery, Diced
  • 4 cloves Garlic, Minced
  • 1 pinch Red Pepper
  • 60 ounces Canned Tomatoes and Juice
  • 2 teaspoons Italian Seasoning
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper Or To Taste
  • 1 tablespoon Honey
  • 4 cups Chicken Stock
  • 1 1/2 Pounds Fresh Cheese Tortellini
  • 1 cup Half & Half or Milk
  • 1/2 cup Fresh Basil, Chopped
  • Parmesan Cheese for serving.
Cooking Directions

  1. In a large pot add olive oil and onion. Cook over medium-high heat until onion starts to caramelize.
  2. Add carrots, celery, garlic and a pinch of red pepper. Cook until veggies start to soften about 2 minutes.
  3. Add tomatoes, italian seasoning, salt, pepper and honey. Mix until well combined.
  4. Bring to a simmer and cook for 15 minutes or until veggies are softened.
  5. Puree in small batches in blender or with a hand held emersion blender. If you remove the hard plastic piece from the lid of the blender and cover it with a clean cloth you don't mind getting stained, it will prevent the lid from popping off causing a mess. The cloth prevents the tomato soup from splattering. Puree all of the soup until smooth.
  6. Add the soup back to the pot and add chicken stock, stir until well combined and bring to a simmer.
  7. Add tortellini and cook for 3 minutes or for recommended time.
  8. Remove from heat and stir in half & half and fresh basil.
  9. Serve with parmesan cheese.
